Fixing health spikes while tanking

During FL today it became blatantly obvious (I normally DPS mainspec) That the damage I take is insanely spiky. during much of the shannox fight I was able to keep my health at or near full, but about every thirty seconds it would suddenly plummet from three melee hits in a row. I am trying to space out DS's to become most effective after big hits, keeping my blood runes on Cd for the 10% less damage, and popping bones every CD I get. Is it a gear issue? Is there something I could change about it to make myself substancially less RNG based by way of hits? Or am I just doing it wrong?

Blood DK tanking is spiky.

There's not a thing you can do about it.
You have 32 expertise and only need 26, actually you don't even need that to be honest.

Move your expertise/hit to mastery/dodge, depending on what's not on the gear you are reforging. You are losing a lot of avoidance to diminishing returns right now.

You aren't running heroic modes so increased survivability outweighs the increased threat (which is unnecessary thanks to vengeance) and the occasional missed attack will not instantly kill you.

Lavawalker if you can afford it on the boots or use a mastery chant that you can afford.

You're using 2 stam trinkets, while stam has greater value to a DK than most tanks the chances of 7% of your health ever being larger than the damage over 5secs in firelands is slim, Mastery trinkets are much better suited for those slots. TB has the Mirror for example.

I've played a druid, a pally and now this DK as tanks and I have to say that the DK is the most challenging thus far. Our survivability is too reliant on our ability to time our attacks and manage CDs like madmen. Euliat is right though, Blood is very spiky and because of that it can be tough with healers that aren't use to it.
